Cooking for Kohai: Kohai Cookies

Cooking for Kohai is a project I’ve been considering for some time. I know quite a few people who have a hard time approaching cooking, and it’s not easy but it’s not as scary as you think it is. For this, I’m going to show a really easy recipe for something tasty you can make that will show you some things about how to cook without being a big elaborate thing.

To make this you need a cup of spread, a cup of sugar, and an egg. That’s all the ingredients you need. You’ll need something to mix them in, probably a bit bigger than 2 cups in size. Most measuring cups are big enough for this. You’ll need a tray you can bake in the oven or under a grill; a bit of greaseproof paper will help but isn’t necessary, and a fork. By ‘spread’ I mean ‘a tasty thick thing you put on toast.’ You can’t do this with jam but you can use spreads like peanut butter or Nutella. Personally, I like to use peanut butter.

Got all those things?

Okay, going to try and do this very simply. These steps do not need to be done perfectly; I’m just making this order as clear as possible to make it easy to follow.

  • Turn the oven on to about half heat. It needs to be warm before you start.
  • Crack the egg into the cup.
  • Stir the egg with the fork. Stab the yolk of the egg to make sure it breaks, and the egg mixes up.
  • Add the cup of sugar, and mix the two until you have this sort of orangey paste.
  • Take your cup of spread and dump it in.
  • Mix them up!
  • Mix them more.
  • You have to get them mixed really well, it will take some time.
  • When you have it all mixed up, that stuff will be like a big sticky blob.
  • If you have the greaseproof paper, put it on the tray. It’s not essential though!
  • Take a fork-full of the mix and splat it onto the tray.
  • Flatten the mix out with the fork, and then make another splat. They won’t expand much as they cook, but do keep them a bit apart – try to put as much space between them as they occupy.
  • Then take the tray and stick it in the oven for about fifteen minutes.
  • The cookies should come out of this a little crispy, a little gooey.

If there’s too much mix for your tray/oven, you can just cover it with glad-wrap and leave it for later when you want to make more cookies.
